Chocolate Chip Cookie
Dough Cake
Chocolate Chip Cake:
1 box white or yellow cake mix3 egg whites
½ C applesauce
¾ C nonfat buttermilk or milk
¾ C light sour cream
1/3 C brown sugar
1 Tbsp. vanilla extract
1 C mini chocolate chips
1. Preheat oven to 350 degrees and
grease 3 8-inch pans. (I like to line the bottoms of my pans with foil or parchment
for easy removal.)
2. Sift cake mix into a small bowl
and set aside.
3. In a large bowl, use a whisk to
combine eggs, applesauce, buttermilk, sour cream, brown sugar and vanilla
extract.
4. Stir in cake mix and chocolate
chips.
5. Divide evenly between your
prepared pans and use a spatula to spread the batter level.
6. Bake for 17-22 minutes or until an
inserted knife comes out clean. (If you are making only two layers, it will
take 20-25 minutes in the oven.)
6 Tbsp applesauce
6 Tbsp. salted butter @ room temp.
1/3 C light brown sugar
1/3 C sugar
1 tsp vanilla extract
¼ tsp salt
1 ½ C all-purpose flour
4 Tbsp. milk
½ C mini chocolate chips
Cookie Dough Filling Directions:
Beat the butter, both sugars,
vanilla, and salt until light and fluffy. Beat in flour, applesauce and milk. Stir in
chocolate chips. (Can use more or less milk to adjust consistency to make it
spreadable.)
1 8oz pkg. 1/3 less fat cream cheese, softened
1 C softened butter
1/3 C brown sugar
3 tsp. vanilla extract
2/3 C flour
1 tsp. salt
4-5 C confectioner’s sugar
2/3 C mini chocolate chips
1. Beat butter, cream cheese and brown sugar for 2
minutes. Add vanilla extract, flour and salt and beat again. Slowly add in
powdered sugar until you reach your desired consistency.
Use 1 ½ C of mini chocolate chips to cover the sides of your cake and decorate the top with piped frosting, cookies and crushed cookies or more chocolate chips.
