Chocolate Chip Cookie Dough Cake

Thank you to Your Cup of Cake (Cookie Dough Cake) and Mississippi Kitchen (Chocolate Chip Layer Cake with Cookie Dough Filling, Salted Caramel Icing and Brown Sugar Butter Cream Dollops)! I have combined your recipes to create the ultimate Chocolate Chip Cookie Dough Cake. This definitely isn't healthy, but my husband will love it for his birthday.

Chocolate Chip Cookie Dough Cake

Chocolate Chip Cake:
1 box white or yellow cake mix
3 egg whites
½ C applesauce
¾ C nonfat buttermilk or milk
¾ C light sour cream
1/3 C brown sugar
1 Tbsp. vanilla extract
1 C mini chocolate chips

Directions:

1. Preheat oven to 350 degrees and grease 3 8-inch pans. (I like to line the bottoms of my pans with foil or parchment for easy removal.)

2. Sift cake mix into a small bowl and set aside.

3. In a large bowl, use a whisk to combine eggs, applesauce, buttermilk, sour cream, brown sugar and vanilla extract.

4. Stir in cake mix and chocolate chips.

5. Divide evenly between your prepared pans and use a spatula to spread the batter level.

6. Bake for 17-22 minutes or until an inserted knife comes out clean. (If you are making only two layers, it will take 20-25 minutes in the oven.)

Chocolate Chip Cookie Dough:
6 Tbsp applesauce
6 Tbsp. salted butter @ room temp.
1/3 C light brown sugar
1/3 C sugar
1 tsp vanilla extract
¼ tsp salt
1 ½ C all-purpose flour
4 Tbsp. milk
½ C mini chocolate chips

Cookie Dough Filling Directions:

Beat the butter, both sugars, vanilla, and salt until light and fluffy. Beat in flour, applesauce and milk. Stir in chocolate chips. (Can use more or less milk to adjust consistency to make it spreadable.)

Cookie Dough Frosting:
1 8oz pkg. 1/3 less fat cream cheese, softened
1 C softened butter
1/3 C brown sugar
3 tsp. vanilla extract
2/3 C flour
1 tsp. salt
4-5 C confectioner’s sugar
2/3 C mini chocolate chips

 Cookie Dough Frosting Directions:

1.      Beat butter, cream cheese and brown sugar for 2 minutes. Add vanilla extract, flour and salt and beat again. Slowly add in powdered sugar until you reach your desired consistency.

To assemble cake, place your bottom layer of cake on your cake stand, flat side down. Spread with half the cookie dough mix. Then, place your next level of cake on top, flat side down. Use the remaining dough to frost that layer. Top with the final layer of cake and cover the cake with the frosting. (Save a little frosting to pipe decorations on top of the finished cake if desired.)

Use 1 ½ C of mini chocolate chips to cover the sides of your cake and decorate the top with piped frosting, cookies and crushed cookies or more chocolate chips.
