Egg Roll in a Bowl
Ingredients:
- 1 lb lean ground turkey
- 1 16 oz. package of bagged coleslaw mix
- 5 cloves of minced garlic
- 1 tsp of minced ginger or 1/2 tsp ground ginger
- 1/3 C Bragg's Liquid Aminos
- 2 Tbsp of toasted sesame oil
Directions:
In a small bowl, mix together the garlic, ginger, aminos and oil. Set aside. In a large saute pan, brown the ground turkey over medium-high heat. Drain pan if necessary. Add the coleslaw mix and stir to combine. Add the sauce to the meat and veggies. Stir and cook for about 3 to 5 minutes, until the cabbage has just began to wilt but is still crunchy.
Serve 1 C of the mixture with 1/2C cooked brown rice or quinoa and garnish with green onions if desired.
